Overview of scholarly research/creative activity: The Food Protection Lab addresses challenges in the fields of food fraud, food mislabeling, and food safety. Our main focus is on the development and application of molecular techniques to detect instances of food mislabeling, specifically with regard to meat and seafood products.
Specific projects working on: 1. Detection of Salmonella enterica in plant-based meat alternatives 2. Identification of species in canned tuna using DNA mini-barcoding 3. Differentiation of fish species using multi-mode hyperspectral imaging

Time commitment for students: 20-30 hours per week during the summer
Requirements for students who work with you: Completed first-year science laboratory classes
