Overview of scholarly research/creative activity:  Nutrition and Food Science: health, food processing, food chemistry.

Specific projects working on:  (1) Basic research in understanding the compositions of bovine and human milks. Translational research for novel bioactives in food to improving intestinal health. (2) Enhancing the safety and shelf-life of fresh-cut fruits, vegetables and ready-to-eat meals using irradiation. (3) Determining preservative and sensory properties of phenolic and melanoidin compounds from coffee, mushroom and sunflower seeds, with the overall goal of enhancing the quality and chemical shelf life of food.


Number of students looking to work with: 5 or more

Time commitment for students:  Meet once a week

When students are needed: Spring 2022,Not this AY

Requirements for students who work with you:  Ideal, but not required: gen chem, organic chem, microbiology, statistics, nutrition

What would students be expected to do​​​​​​: Work with amazing Food Science and Nutrition faculty on a project of your interest.


Additional Information: We are interested in recruiting students for a fully funded Research Fellowship in the accelerated M.S. in Food Science.
